We live in a wonderful grass-growing environment. I have heard that Vancouver Island consumes 50,000 head of beef per year, yet we only have 6,000 beef animals on the island (including the breeding stock.) Let’s raise more locally grass-fed and grass-finished beef, to capitalize on our unfair advantage of plentiful rain and short winters creating an abundance of grass.
Beef is harvested after the spring flush of grass, the strongest grass of the year is in April, May, and June. We harvest beef at the beginning of the summer so that meat comes home for BBQ season.
Retail cuts will be available throughout the year at the farmers’ markets. Bulk buyers will receive their beef at the End of June or in July.
